Catch Up!

Hi guys this is my first post on the newly re-named Nic's adventurers!!!

I have not baked since before Easter, as life has taken a very unpredictable turn for me, I got a new job working the High Wycombe branch of Home Bargains in April.

Then the big black cloud came, to disturb my fun

The black cloud was Type 1 diabetes, come to spoil my fun, ruin my life, ruin this blog, ruin my relationships  and making me very cauisos in what I eat, so out came of all the ideas that I had for this blog, deleted and gone. I even though of deleting this blog and not bothering to blog about Food & Baking as half for my creations had more 50g of carbs due to the fact it was sweet baking. 

But reading other blogs of type 1's certainly helped and I worked out that, it does not stop me at any cost I still can bake, sweet things just have to include them into the carbs i eat, that was a relaive for certain. 

For now at least I'm mostly in control of my Blood Sugars, apart from the odd one or two high (Hypers) and not to many (Hypo's) at the moment!

Recipe - Chocolate chip Shortbread Bites

Hi gys two recipes within a week of each crazy right!! This is a quick shortbread recipe to cheer me up on such a dull day

Chocolate Chip Shortbread Bites 


  • 125g Butter
  • 55 g Caster Sugar
  • 180 g Plain Flour, Sieved 
  • 3 ml Vanilla Extract
  • 50g Plain Chocolate Chips


  • Mixing Bowl 
  • Sieve
  • Electric Whisk
  • Spatula
  • 1 Square Baking Tin - Greased
  • Cooling Rack
  • Knife

Recipe - Mini Luscious Lemon Cakes

Hi guys, wow I seem really bad at updating this blog, my PC broke last week, so I lost half of my saved recipes for this blog, hopefully I will get back when I get my back-up drive back anyway this was supposed to be for Mother's Day, as a treat for my mum, as it was her mum's recipe who passed away in 2012, and who was famous for this cake. I'm using my mini loaf tin, it does well as well in a 2 lb loaf tin as well. I'm also using for the first time for this my brand new electric hand held whisk instead of spending hours doing it by hand!

Mini Luscious Lemon Cakes

Prep Time: 15 Minutes 
Cooking Time: 30 Minutes 
 Total - 45 mintues
Makes 12- Mini Loafs cakes or 1 2lb Loafs


• 100g Soft Margarine 
• 175g Self-Raising Flour 
• 175g Caster Sugar 
• 4 tbsp Semi-Skimmed Milk 
• Finely grated zest of 1 Lemon 
• 2 Large Eggs 


• 3 tbsp. Icing Sugar 
• Juice of 1 Lemon 


• 1 Mini Loaf Tin with 12 holes
• 1 Mixing Bowl 
• 1 Electric Wisk
• 1 Spatula 
• 1 Small Saucepan 
• 1 Cake Tester 
• 1 Small Metal Spoon

Recipe - French Toast

Hi guys, work did not end well, I'm now unemployed and looking for work :( I made this last weekend to cheer my self up. I make a similar version without the sugar to have Bacon and spaghetti hoops as we do on Guide camp. I had about 5/6 pieces last summer at camp!!! 

This is perfect for a lazy weekend or valentines breakfast, which ever you feel is up to you, or even on a camping trip!

 French Toast

Cooking time 5 minutes 
Prep time10 minutes
Ready in 15 minutes 
Serves: 1



  • 2 Eggs
  • Pinch of Sugar
  • Splash of milk
  • Knob of Butter
  • 1 Slice of Bread - I use wholemeal bread (at camp we use what ever we have left over or white bread)
  • Fruit and maple syrup to serve


  • Small glass Casserole dish 
  • Whisk
  • Bread Knife 
  • Fork
  • Tongs 
  • Large Frying Pan

Recipe - Cheese Biscuts

Hi guys another item for the work party, you can add different ingredients to make it adult or child friendly

Cheese Biscuits 

Cooking time 15 minutes 
Prep time 30 minutes
Ready in 45 minutes 
Makes: 16


  • 160g Plain Flour, plus a little extra for dusting 
  • 70g Uunsalted Butter, chilled and cut into little cubes, plus a little extra for greasing 
  • 80g Mature Cheddar, grated
  • 25g Parmesan Cheese, grated
  • 1tsp Mixed Herbs
  • 1/4 tsp Paprika
  • Grind of Black Pepper
  • 1 Medium free-range egg, beaten 


  • 2 Baking Trays
  • Wooden Spoon
  • Large Mixing Bowl 
  • Small glass Bowl
  • Fork
  • Rolling Pin
  • Circle Cutter
  • Spatula
  • Cooling Rack
