Blogmas - Day 23

Day 23

It's 2 days before Christmas, as we are all busy preparing for our Christmas dinners, doing the last minute shopping. 

So in this post I will reflect of the last 8 months of this blog and what to learn in 2016

  1. I can do very popular posts even if's because I shared them to a linkie
  2.  Keep going at it, even though you do not get a single comment!
  3. Have fun doing it that is what it's all about
  4. Practice your bakes before!
  5. Hopefully get some skills from this!  
  6. Improve on followers aka get a few more!!
  7.  Be careful how much you bake! (I have had a week of eating bakes as nobody at work has eaten them!)
  8. Enjoy the new year!

Blogmas - Day 22

Day 22

  I'm really bad at doing this blogmas , I have had a busy day today with finishing up my Christmas shopping. I have most problem that effects us ladies what to buy for men?

I have always bought my dad beer, i know, but there are so many breweries, so many types. Independent breweries or the main ones that are stocked on the supermarket shelves

If you buy beer for your family, what is your favorite to buy?

I have been really busy again, it seems that work want to own this time of year, plus buying presents and driving lessons to to!

What is your favorite Christmas breakfast? Mine is scrambled egg with smoked salmon. I do love it as it's luxury and filling! I also like it with bacon to here is my version

Scrambled Egg with Smoked Salmon 


Preparation time: 5 minutes 
Cooking time: 5 minutes

 Ingredients 

  • 1/2 Pack of smoked Salmon Trimmings 
  •  1 Egg
  • Splash of milk
  • Knob of Butter
  • 1 Slice of Toast (I prefer Wholemeal Bread)
  • Pepper to season

  •  Milk Saucepan or similar Small Saucepan
  • Small Glass bowl

Recipe - Leek & Salmon Pie

I was lucky to get my first blogging assignment on behave of British Leeks to produce a recipe that involved Leeks, so after some though I came up with this quick cheats pie 

 Leek & Salmon Pie


Preparation time: 30 minutes 
Cooking time: 30 minutes 
Total time: 1 hr

 Ingredients 

  • Half a pack of Ready Made Puff Pastry 
  • 1 Leek, chopped in rings 
  • 1/2 Pack of smoked Salmon Trimmings 
  • 1/2 Red Pepper, Chopped 
  • 1 Carrot, Peeled & Chopped 
  • 1 pack of White Sauce, made to pack instructions 
  • Grind of Black Pepper & Salt 
  • Milk to brush the top of the pie 

Equipment 

  • Rolling Pin 
  • 1 large Saucepan 
  • Measuring Jug
  • Pie Dish Rolling pin

I have been really busy again, work consultations, which have not been fun at all. So I would share some more products I have bought on a christmas theme and my tree

I recently bought some fun crumpets, one like trees and the massive version, they were all very yummy!!

Blogmas - Days 11-15

So sorry I forgot to post the last few days, due to work with consultations and I also did not get the job I had the interview for :(


Day 11-15


This post really is all for the last 4 days of not posting! I made some Gingerbread men Shaped cookies from some shop bought cookie dough in the freezer. I mostly followed the packet instructions! 



 Rolling out the dough and using the cutters to produce about 6 "men"
 Then baked for 12 minutes at 180 Fan / Gas Mark 6
Also I bought a lucky bamboo!!

Blogmas - Day 10

Day 10 


Hi guys, I had my interview so I'm hopeful I might have got the job, I won't know till next week, so another, random post of my photo's not a lot of Christmas food or recipes. This week is to busy for me, so sorry :(

I loved all the fragrances from this months box, my favorite was Black Tea & Almond and Snow Angel. 
 My Gingerbread family Yankee Candle Tea Light Holder - I got this mended as it broke, I love the fragrance of Christmas Cookie which I always burn at this time of year
 Ikea plants (the fake ones) are always so pretty, no watering!!
 Reindeer ornaments - this one is from last year, I love the bell on it!
Gingerbread cutters, waiting to be used in making Gingerbread, recipe coming soon!!

I'm sorry I'm really bad at posting on correct dates

Day 7

Today was our Girl Guide Christmas fete, the girls have stalls with Games, biscuit decorating and a cake stall/ i always buy a cake from one of the stalls, unforutaley I was on the tea & coffee duty, so I did not have time to photograph the cake I bought, then it got squashed on the way home :( I did get a candy cane though.

I'm a really bad at not buying Christmas novelty items that look like food, unfortunately I bought one this year

Blogmas - Days 4, 5, & 6

Hi guys, it's 4 days into December - crazy!! 

Day 4

Today has been quite busy with my driving lessons, so I have not much to post for today, but a wish list of books that I would like to cook with next year 

Day 5

I'm at work all today, so I have not the easiest time to spend time blogging, so I'm revising a recipe of mine from the summer to hopefully bring some sunshine back! 

I had a carton of almond milk at the back of my cupboard, which needed to be used up, I have never tasted it so, with a quick taste So I decide to use it in a favorite breakfast on my mine, when I was on anti malaria/antibiotics medication when coming back from Kenya, my poor mum had trouble with breakfast for me, as I had not eaten a lot of food, she tried her best with porridge made from water and sweetened with honey - yuk!!! But reading through her New Convent Garden soup book she found this bircher muesli recipe, I'm adding Almond milk this time as I can have diary and will also do a version with out the diary which is in the book.

Bircher Muesli

Preparation time: 15 minutes
Cooking time: 1hr/1 Day 
Total time: 1hr 10 minutes/1 Day 15 minutes
Makes: 1 

The Diary version:

  Ingredients 

  • 50g Rolled Porridge Oats
  • 75ml Almond Milk
  • 1/4 Green Apple
  • 1/4 Pear
  • 10g Full Fat Greek Yoghurt
  • Juice of 1/4 Lemon

Non-Diary version

 Ingredients 

  • 50g Rolled Porridge Oats
  • 75ml Apple Juice
  • 1/4 Green Apple
  • 1/4 Pear
  • 10g Greek Yoghurt (you can not use the yoghurt or a non-diary version instead)
  • Juice of 1/4 Lemon

Method 

  1. Place the oats and apple juice (almond milk for the diary version) in a large bowl, stir and leave to soak for at least 1 hour or ideally overnight 
  2. When the soaking of the oats has finished, leaving the skins on grate the apple & the pear, and then add them to the oats, with the the lemon juice and yoghurt and stir well 
  3. Serve with nuts and seeds.

Day 6 


Another day at work, so I would share some thoughts about favorite Christmas, things to eat. My favorites are:
  • Turkey
  • Bacon - I love crispy bacon on top of the turkey not soggy
  • Stuffing - Sausage meat one
  • Homemade Mince pies or crosses or tart - my late Gran made really lovely Wholemeal pastry based Mincemeat tart (I will make it next week) 
  • A glass or two of wine!! I don't drink as much due to my work patterns, driving lesson and my volunteering, so I have lots to compaste! 
  • Advent Calendar Chocolate - Simple chocolate heaven!
  • Mulled Wine/Cider - Hot drink yes please :)

Blogmas - Day 2 & 3

Hi guys this is day 2 & 3 of my sort of Blogmas, enjoy :)

Day Two - December 2nd

Food shopping can be enjoying with the pressure to buy Mince Pies, Turkeys and all the trimmings. I do like to buy my food in bits and pieces. I also look out for special foodies items that I might only have a this time of year so hence the bill at the supertanker going up, which confuses the checkout assistant when you squeeze so much in a small basket!

So Anyways I bought a couple of items that I thought I would try over the festive period


Baileys Chocolat Luxe 50cl rrp £18 (I paid £15)

I love the limited edition design of the bottle, it looks really tempting. I'm really keen to start drinking this, maybe over some ice cream or just as a plain shot. 

Have any of you guys tried this yet, I'm keen to see what you think!

Day Three - December 3rd


It has been dark today, I suppose to impose the wonder of the temperatures outside getting colder, which in turn is the  perfect time for Christmas flavoured Tea's. I always buy a spice winter tea around this year wether it's a fruity one or a tea blended one. This year I'm trying from last year - Whittards Festive Chai Black Tea
 As soon I opened the box, I got the smell of spice and vanilla, which was nice. Once in the cup with milk, the spices seemed to disappear, maybe not enough milk! It had a nice rounded Chai taste, but not overally of spice. Overally a nice tea, will be drinking this all the time up to the big day. 

Any special teas that you guys drink at this time of year any recomdenations to try would be lovely

Hi guys, long time no see! I have been really busy with applying for jobs and preparing for Christmas, as it's now the first of December (where has the year gone!!). I'm trying to do a post at least once a day for a sort of Blogmas. I have watched Volgmas before, so it shall be interesting to see if I can keep up doing a post a day! To the bake, I have not done anything since October! So now i have a few spare minutes to bake, here is some simple but grown up cookies.  

Chocolate & Orange Cookies

Recipe - Rhurbarb Crumble

Hi guys, long time no see!! With now autumn coming in its comfort for me to have on my own as my parents are in Australia on holiday for 3 weeks (lucky!) so it’s house sitting and exploring Weymouth again (cheap break for me), and with the final of the bake off showing in less than 10 minutes! It’s time for a recipe again, you can swap the rhubarb for any other fruit apples and both pears would suit this perfectly! 

Rhubarb Crumble 


Ingredients 

• 400g of Rhubarb, washed and chopped 
• 200ml water 
• Juice of 1 lemon 
• 9g sweetener (I used spendla) 
• 1 tsp Ground Ginger 

Crumble Topping 

 • 55g Wholemeal Plain Flour 
• 55g Oats 
• 75g Soft Light brown Sugar 
• 75g Margarine 
• ½ tsp Baking Powder

Recipe - Cheese and Onion Muffins

Hi everyone, I have not posted on here in over a month, I have a had a busy summer with Girl Guide Camp (I'm a unit helper!) which involved a trip to Brownsea Island .Plus family birthdays, colds and trips to my parents hoilday home in Weymouth which have all been nice!. So I thought I would do some savoury muffins as I had some free time!!  

Cheese and Onion Muffins 




Makes 5 Muffins 
Prep Time: 25 Minutes

 Ingredients 

 • 70g British Mature Cheddar 
• 120ml Semi-Skimmed Milk 
• 1 Eggs – beaten 
• 40g Melted Butter – cooled 
• 140g Self raising Flour 
• 4 Spring Onions – chopped 
• 1/4 teaspoon Mixed Herbs 
• Salt and Black Pepper

Recipe - Danish Dream Cake (Drømmekage)

From a very young age I eat this cake at birthday parties as well as normal Victoria sponge type cakes, even though I don't remember it much!! For those on my blog that don't know I was born in Denmark (my parents are English so don't worry) and always go back every few years, less now my dad has retired, we would eat a lot of Frikadeller's and this cake, plus the pastries as well. I decide to re-create it to see if I can do it again! 

 Danish Dream Cake (Drømmekage) 


Prep Time: 15 Minutes 
Cooking Time: 45 Minutes 
 Total - 1 hr

Makes 12-16 servings. 

Ingredients

• 250g Plain Flour 
• 2 tsp Baking Powder 
• 50g Butter 
• 200ml Milk 
• 3 eggs 
• 300g Caster Sugar 
• 1 tsp Vanilla Extract 

 For the Topping: 
• 125g Butter, softened to room temperature 
• 50ml Milk 
 • 100g Dessicated Coconut 
• 200g Muscavado Sugar

Recipe - Mixed Berry Buttermilk Muffins

Hi guys it seems ages since I did a proper bake, with the summer starting and fruit coming out of our ears, I decided to do this bake from this book. I used a mixture of blueberries and loganberries which my parents seem to have lots of!! You can just use blueberries or other summer fruit.

Ingredients

  • 85g Melted Butter
  • 400g Plain Flour
  • 175g Caster Sugar
  • 1 tbsp Baking Powder
  • Finely grated zest of 1 Lemon 
  • 1/2 tsp Salt
  • 284ml Buttermilk
  • 2 Eggs, beaten
  • 250g of Fresh Blueberries & Loganberries

Recipe - Matchpoint Pavola

Hi guys I have been so busy that I have had not a lot of time to bake or when I did they did not go well :( So I decided to do a quick pudding to celebrate the tennis (or I bought a Matchpoint Fruit salad from the Sainsbury's that was reduced to Clear, along with some Coconut Pieces, Extra Thick Cream and Meringue Shells) 

 Matchpoint Pavlova 


Serves 2

• 1 Matchpoint Fruit Salad (or similar fruit salad with mixed Summer fruit) 
 • 1 packet of Coconut Pieces 
• 2 Meringue Nests (I have pre-bought ones you can make yourself with you wish!) 
• 1 Pot of extra Thick Cream

Recipe - Carrot Cupcakes with Orange Icing

I saw this recipe for what to be similar to my favourite carrot cake, I tweaked it a little to include some spices that are normally in a carrot cake, plus I used wholemeal plain flour to give a different flavour.

  Carrot Cupcakes with Orange Icing



Serves: 6

Prep Time: 30 minutes
Cooking Time: 20 minutes
Total: 50 minutes

Ingredients 

For the cupcakes:

  • 1 Medium-sized Carrot
  • 75g Unsalted Butter, softened
  • 75g Light Muscovado Sugar, sifted
  • 1 Egg
  • ½ tsp Vanilla Extract 
  • Grated of Zest ½ Orange
  • ½tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg (freshly grated will give you the best flavour) 
  • 100g Wholemeal Plain Flour
  • ½ tsp Baking Powder 
  • 6 Walnuts, Chopped

For the icing:

  • 38g unsalted butter, softened
  • 125g icing sugar
  • 1-2 tablespoons orange juice
  • Walnuts to decorate , optional

Since been back from the USA, I wanted to do an American bake, finally agreeing on these lovely cupcakes, mine turned out more brown than red!!!

Prep time: 15 mins
Cook time: 15 mins
Serves: 12  

Ingredients

Cupcakes

  • 125g Plain Flour
  • 100g Condensed Milk 
  • 1 egg
  • ½ tsp Vanilla Extract 
  • 85g Buttery Spread (I used the Stork with Butter Spread)
  • 1½ tsp Baking Powder
  • 2 tbsp Cocoa Powder 
  • 5-6 tsp Red Food Colouring 

Cream Cheese Frosting 

  • 200g Icing Sugar 
  • 55g butter, softened
  • 1/2 tsp Vanilla Extract 
  • 1-2 tbsp Condensed Milk 
  • 85g full fat cream cheese
  • 6 Strawberries sliced in half to decorate

Hi everyone, I have been so busy with work and Guides, I recently was awarded my 5 years voluntary service award, so to celebrate, and I also got some of the young Rhubarb stalks my dad was going to put them in the compost heap - so wasteful plus he also peels them! So I put them to good use in this rice pudding as a treat!

• 125ml Almond Milk 
• 15g Caster sugar to taste 
• 25g Short Grain Pudding Rice 
• 25g White Chocolate, broken into small pieces 

For the compote 

• 1 large Orange

• 25g Caster Sugar 
• 150g Rhubarb (trimmed weight), wiped clean, then cut into 2.5cm pieces

Hi everyone I'm back from my holiday to Vegas, I will be doing a review of the restaurants I went to in my next post, but as usual when you come back from your holidays you do a massive shop as you have nothing in your cupboards, but always forget one thing! I though I would do a small bake this week, to get me back into the swing of things, plus I'm also busy with work to bake a batch of cupcakes :(

Recipe - Lemon & Blueberry Greek Yogurt Muffins

 With me going away on Holiday in less than a week, it's time to use all the items in the fridge which in this case was half a pot of Greek yoghurt! I have not really cooked with Greek yoghurt before only had it with stewed fruit or on my granola! So this was a total experiment, but it was a good one!

Ingredients

  • 250g Plain Flour  
  • 1 tsp Baking Powder 
  • 1/2 tsp Baking Soda 
  • 1/8 tsp Salt 
  • 36g Light Soft Brown Sugar
  • 1 Egg
  • 60 ml Milk  ( I used Semi-Skimmed)
  • 2 tbsps Olive Oil 
  • Juice & Zest of 1 lemon 
  • 1/2 tsp vanilla extract 
  • 368g Full Fat Greek Yoghurt
  • 75g Blueberries, Washed

Equipment

  • 12 Hole Muffin tin with 12 cases
  • Large Bowl
  • Medium Bowl
