Recipe - Quick Chocolate cookies

Hi another recipe, I made these chocolate chip cookies, before I had my driving lesson, so they are quick if you have not that much time on your hands, or want a quick treat!


Quick Chocolate Chip Cookies





Makes 12

Ingredients

• 125g Un-Salted Butter
• 175g Soft Light Brown Sugar
• 1 tsp Vanilla Extract
• 150g Plain Flour
• 1/2tsp Baking Powder
• Pinch of Salt
• 100g of Chocolate Chips (I used a mix of White and Milk)

Equipment 


  • 2 baking trays 
  •  Large Saucepan 
  • Sieve 
  • Wooden Spoon 
  • 1 Dessert Spoon 
  • Wire Cooling Rack

Recipe - Pea & Lemon Risotto

I was recently challenged by one of my twitter followers, to do a recipe for a fussy vegetarian. I searched all over for ideas, not of course not knowing whether vegetables for this recipe would be good enough for a fussy eater. With the zesty lemon and rosemary which go well together. For non-vegetarians this can be served alongside some grilled chicken, or as I have done some baked fish and extra vegetables.

Pea & Lemon Risotto

Ingredients

  • 100g Risotto Rice 
  • 425g Hot Vegetable Stock 
  • 1/4 Red Onion, finely chopped 
  • 1 Fat Garlic glove, finely chopped 
  • 25g Frozen garden Peas or petit pois 
  • 25g Parmesan (or vegetarian substitute), grated, plus extra to serve 
  • Juice and zest 1/4 lemon 
  • 2 springs of Rosemary, leaves only, finely chopped 
  • 2 Bay Leaves 
  • Black Pepper

Recipe - Lime & Malibu Mini Cheesecakes

Lime & Malibu Mini Cheesecakes



As cocktail season starts, I thought about doing a recipe to embrace the warmer weather. These mini cheesecakes are prefect for this with the hint of coconut & lime. For non alcoholic version you can omit the rum.



Makes: 6 mini Cheesecakes
Prep Time: 30 Minutes
Cooking Time: 30 minutes
Total Time: 1hr

Ingredients

  • 200g Cream Cheese
  • 63g Caster sugar
  • 1 Eggs
  • Finely grated zest and juice of 1/2 lime
  • 25ml of Malibu

Base

  • 50g Digestive Biscuits
  • 20g Melted Un-salted Butter

Equipment

  • 12 Hole Muffin Tin with 6 paper Cases
  • Large Bowl *2
  • Wisk
  • Rolling Pin
  • Teaspoon
  • Dessert Spoon

Recipe - Rasberry & White Chocolate Blondies

I want to really do my first bake for this blog, but I had a decision which to do first, brownies or biscuits. So in the end I choose the brownies! You can use butter for this recipe, but I choose margarine instead to save time!

Raspberry & White Chocolate Blondies


Makes 12

Ingredients

  • 150g Margarine
  •  200g White Chocolate, Broken
  •  200g Caster Sugar
  •  2tsp Vanilla Extract
  •  3 Medium Eggs
  •  200g Plain Flour
  •  1tsp Baking Powder
  •  75g White Chocolate Chips
  •  150g Raspberries, washed

Recipe - Spicy Chilli Con Carne

I never have cooked a Chilli Con Carne before, so I saw this as a challenge, as I'm keen to eat spicy food but never cook it. I choose this recipe from the TV program The Hairy Bikers and Lorraine Pascale: Cooking the Nation's Favourite Food.

I have halved the quantities as I wanted to make enough for 1 portion and one to freeze for later, but it can be doubled up to make the full amount. The avocado salsa does not freeze so it can be used the next day to go with Taco's or as salad with some tomatoes and rocket


Spicy Chilli Con Carne

Ingredients

For the chilli con carne:
  • 2 tbsp Olive Oil
  • ½ large Red onion, very finely chopped
  • 1 garlic clove, very finely chopped
  • 2 bay leaves
  • 2 sprigs fresh rosemary, leaves only, very finely chopped
  • 1 tsp ground cumin
  • 1 ½ tsp chilli powder
  • 250g lean beef mince
  • 1 x 200g tin chopped tomatoes
  • 1 tbsp clear honey
  • 125ml beef stock
  • boiled rice to serve
  • Salt and freshly ground black pepper


For the avocado salsa:
  • 1 ripe avocado, skin and stone removed, finely diced
  • ¼ red onion, finely diced
  • ¼ cucumber, finely diced
  • ¼ lemon, juice only
  • handful roughly chopped fresh coriander leaves (optional), plus extra to serve

Food - Resturant Review

Hi guys, my second post on here is a review on a restaurant that I was lucky enough to go to!


I was lucky enough to get tickets to see McBusted at the O2 in London, there are plenty of restaurants in the the 02 before you go into the actual arena area, which was nice. I last went to the o2 when it was the Menuluim dome! So I choose to go to Gournment Burger for a simple cheep meal

Recipe - Apple & Strawberry Compote

Hi Guys my first recipe on here!! As spring is coming into full prominence, it's time for all the British fruit to come into flourish. I love apples esp. cooking ones for making compotes to crumbles. This recipe is simple and can be served with anything I did it with a pastry bottom with layers of fruit and Greek style yoghurt 


Apple & Strawberry Compote

Serves 1(can be doubled up for more)

Ingredients

  • 1 CookingApple, peeled and Chopped 
  • 6 Strawberries , Washed, hulled and sliced in quarters 
  • 5 tbsp of cold water 
  • 20g ofLight brown Sugar 

To Serve

Half of a cooked Sheet of ready made puff pastry & Greek Style Yoghurt or Ice Cream
