Recipe - Strawberry and White Chocolate Cookies

Hi everyone I'm back from my holiday to Vegas, I will be doing a review of the restaurants I went to in my next post, but as usual when you come back from your holidays you do a massive shop as you have nothing in your cupboards, but always forget one thing! I though I would do a small bake this week, to get me back into the swing of things, plus I'm also busy with work to bake a batch of cupcakes :(

Strawberry and White Chocolate Cookies 


Preparation time: 15 minutes
Cooking time: 20 minutes
Total time: 35 minutes
Makes: 14

Ingredients 


  • 112g Unsalted Butter, softened 
  • 112g Golden Caster Sugar 
  • 75g Condensed Milk 
  • 175g Self-Raising Flour 
  • 25g White Chocolate Chips
  • 1/2 a tube of Freeze Dried Strawberries
  • 1/2 tsp Vanilla Extract

Equipment

  • 2 Baking Trays
  • Large Bowl
  • Wooden Spoon
  • Spatula
  • Metal Spoon 
  • Wire Cooling Rack

Recipe - Lemon & Mint Cheesecake

Another recipe to use up all the items in my fridge before going to Las Vegas for a week of sun and relaxation

Lemon & Mint Cheesecake


 • Preparation time: 10 minutes

Makes: 1

Ingredients 

  • 3 Digestive biscuits
  • 25g unsalted butter, melted
  • 25g soft cheese
  • 1/2 tsp Vanilla Extract
  • 2 dessert Spoons Caster Sugar
  • 1/2 tsp Lemon Juice 
  • Handful of mint leaves, Snipped 
  • Fresh Fruit and icing Sugar to decorate

Recipe - Lemon & Blueberry Greek Yogurt Muffins

Lemon & Blueberry Greek Yoghurt Muffins 


 With me going away on Holiday in less than a week, it's time to use all the items in the fridge which in this case was half a pot of Greek yoghurt! I have not really cooked with Greek yoghurt before only had it with stewed fruit or on my granola! So this was a total experiment, but it was a good one!

Ingredients

  • 250g Plain Flour  
  • 1 tsp Baking Powder 
  • 1/2 tsp Baking Soda 
  • 1/8 tsp Salt 
  • 36g Light Soft Brown Sugar
  • 1 Egg
  • 60 ml Milk  ( I used Semi-Skimmed)
  • 2 tbsps Olive Oil 
  • Juice & Zest of 1 lemon 
  • 1/2 tsp vanilla extract 
  • 368g Full Fat Greek Yoghurt
  • 75g Blueberries, Washed

Equipment

  • 12 Hole Muffin tin with 12 cases
  • Large Bowl
  • Medium Bowl
  • Sieve
  • Wisk
  • Dessert Spoon
  • Wire Cooling Rack
