Food - Recipe - Carrot Cupcakes with Orange Icing

I saw this recipe for what to be similar to my favourite carrot cake, I tweaked it a little to include some spices that are normally in a carrot cake, plus I used wholemeal plain flour to give a different flavour.

  Carrot Cupcakes with Orange Icing



Serves: 6
Prep Time: 30 minutes
Cooking Time: 20 minutes
Total: 50 minutes


 Ingredients 

For the cupcakes:

  • 1 Medium-sized Carrot
  • 75g Unsalted Butter, softened
  • 75g Light Muscovado Sugar, sifted
  • 1 Egg
  • ½ tsp Vanilla Extract 
  • Grated of Zest ½ Orange
  • ½tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg (freshly grated will give you the best flavour) 
  • 100g Wholemeal Plain Flour
  • ½ tsp Baking Powder 
  • 6 Walnuts, Chopped

For the icing:

  • 38g unsalted butter, softened
  • 125g icing sugar
  • 1-2 tablespoons orange juice
  • Walnuts to decorate , optional 

Equipment

  • 12 hole muffin tray with 12 muffin cases
  • Large Bowl *2
  •  Sieve
  • Wooden Spoon *2
  • Dessert Spoon
  • Cake Tester
  • Pipping Bag

Method

  1. Preheat oven to 170°C (150°C Fan) /325°F / Gas Mark 3. Line  a muffin tray with 6 paper fairy paper cases
  2. Peel and finely grate the carrots. Set aside
  3.  In a large bowl, cream together the butter and sugar until fluffy. Beat in the eggs, one at a time, and then beat in the carrot, vanilla, walnuts and orange zest
  4. Sift in the flour, baking powder and spices and stir to gently combine
  5. Fill the paper  cases ¾ full and bake for 15-20 minutes or until an inserted skewer comes out clean. Allow to cool in the tins for 10 minutes then remove and allow to cool completely on a wire rack. Frost with the icing when cold. 

 For the icing:

  1. In a large bowl, cream the butter until fluffy. 
  2. Sift in the icing sugar and beat until thick. Add enough of the orange juice to make it a frosting consistency
  3. Put the icing into a piping bag, pipe on to the cooled cakes, once iced place a walnut on top
